Chicken And Onion Salad (Goi Ga):
Serves 4; 620 Calories per serving; Protein 64g; Carbohydrates 32g; Fat 3.6g

Ingredients: 1 chicken; 30 Rau ram (Vietnamese mint leaves); 1 white onion; 2 lime; a pinch of salt; a pinch of pepper; a pinch of sugar;
Preparation: Rub the chicken with a little salt, pepper and chopped rau ram. (If rau ram leaves are not available, use basil leaves as an alternative). Steam the chicken until it is fully cooked, then debone it. Shred the chicken into thin strips and mix it with onion, lime juice, sugar and the remaining rau ram. Add salt and pepper to taste. Arrange the salad into a conical shape and sieve. Alternatively you may serve the salad with roasted Vietnamese rice crackers.

Star Fruit And Clam Soup (Canh Ngheu):
Serves 4; 650 Calories per serving; Protein 73g; Carbohydrates 42g; Fat 1.3g

Ingredients: 6 1/2 cups chicken stock; 24 white clams; 1 tbsp vegetable oil; 2 cloves garlic finely chopped; 2 tsp baby leeks, finely chopped; 2 tbsp Nuoc mam; 1 tsp shrimp paste; 2 star fruit sliced;
Garnish: a pinch coriander; a pinch rau ram (Vietnamese mint leaves);
Preparation: Bring the chicken stock to the boil, then add the clams and cook until the shells open. Remove the clam flesh and set aside. Heat the oil in a pan and saute the garlic and baby leeks until they are soft. Add the cooked clams and season with and shrimp paste. Bring to the boil. Add the chicken stock and star fruit, then immediately turn off the heat. Garnish with coriander and rau ram to serve.
