Asian Tuna Tartare On Cucumber Carpaccio With Herb Salad:

Ingredients:
Asian Tuna Tartare: 11oz / 320g tuna; 5oz / 140g cucumber; 1 1/2oz / 40g spring onions;;
Tuna Dressing: 1/2 cup balsamic vinegar; 4 tsp olive oil; 4 tsp sesame oil; 3/8 cup wasabi dressing; wasabi a pinch;
Asian Vinaigrette: 3/4 cup olive oil; 4 tsp sesame oil; 8 tbsp rice wine vinegar; 3/8oz / 12g ginger;
Fresh Herb Salad: 1/4oz / 8g coriander; 1/4oz / 8g chervil; 1/4oz / 8g sprouts; 1/4oz / 8g parsley; 1/4oz / 8g watercress; 1/4oz / 8g red leaf lettuce, sliced; 3/8oz 10g enoki mushrooms;
Preparation: Dice the tuna and 40g of the cucumber. Slice the spring onions very finely and combine it with the diced tuna and cucumber. Mix the ingredients for the tuna dressing and use half over the tuna tartare. Combine the ingredients for the Asian vinaigrette. Combine the herbs for the herb salad, then add the Asian vinaigrette, lettuce and enoki mushrooms. Mix well. Slice the remaining cucumber thinly and place it on a plate. Arrange the tuna tartare on top of the cucumber, followed by the herb salad. Drizzle the remainder tuna dressing over the salad and serve.
Chilled Yogurt Soup With Mint Chutney:
Serves 4; 15.4 Calories per serving; Protein 0.5g; Carbohydrates 3.5g; Fat 0.2g
Ingredients:
Mint Chutney: 1/4tsp chilli powder; 1/4tsp ginger; 1/4 tsp garlic; 1/4 tsp green chilli; 1/2 tsp sugar; 2 tbsp yogurt plain; 1 tsp lemon juice; 1/4oz / 8g mint leaves;
Yogurt Soup: 1 lb / 480g cucumber peeled; 2 cups yogurt; 4 garlic; salt to taste;
Preparation: Blend all the ingredients for the mint chutney until it becomes a smooth paste. Blend all the ingredients for the yogurt soup and keep it chilled in a refrigerator. To serve, transfer the yogurt soup into a chilled soup bowl. Garnish with mint chutney and fresh mint leaves.
